Sautéed Bangs Island Mussels

Who doesn’t love Bangs Island mussels! This dish is sure to impress, any night of the week.

4 pounds of fresh Maine Mussels
2 cloves chopped garlic
1 thinly sliced onion
1 pint halved cherry tomatoes
1/4 cup olive oil
1/2 cup dry white wine or Ale
3 TBS butter
1 lemon
1 handful fresh picked parsley
1 handful fresh picked dill
1 pinch of crushed pepper
freshly ground pepper
1/4 cup fresh Parmesan cheese

Sauté tomatoes, onion and garlic on low in olive oil until soft, add white wine or ale and crushed red pepper, simmer for 5 min. Add herbs, juice of 1 lemon, butter and mussels. Cover and steam for 5-8 minutes or until mussels are cooked through.

Serve hot in a big bowl with crusty bread or over pasta. We like to use couscous as our pasta. Finish with fresh Parmesan and pepper.
