Mignonette is a traditional sauce for raw oysters and clams, made of: vinegar, fresh cracked pepper and shallots. You may use a variety of vinegars, we like Champagne vinegar or red wine vinegar.

1 cup vinegar
1/8 cup shallot
1-2 TBS fresh cracked pepper

Combine all 3 ingredients and served chilled

To add a twist to your mignonette try adding one of these “extras”:

1 tsp freshly grated ginger
1/8 cup wild Maine blueberries (puréed)
1/8 cup fresh cranberries (puréed)
1 TBS finely chopped jalapeños
1/8 cup cucumber juice (purée 1/2 cup cucumber, strain)
