Grilled/Roasted Oysters

This is an easy way to enjoy oysters, without having to shuck them!

Ingredients:
36 Mere Point Oysters
2 sticks of butter
1/2 red pepper chopped
1-2 TBS of chopped garlic
1/8 cup parmesan cheese
2 TBS chopped chives or scallions
2 TBS fresh chopped parsley
1 lemon

Mix all ingredients except lemon. Cut lemon and reserve for finished oysters.

Place oysters un-shucked on a hot grill or in a hot oven. Keep an eye on them because when they pop open, they are done. Remove them from the grill carefully as not to loose the oyster liquor. Remove the top shell and cover with topping and a fresh squeeze of lemon.

If shucking oysters prior to cooking, top with butter mixture before grilling. When oysters start to bubble, they are done and ready for a fresh squeeze of lemon and perhaps some hot sauce!
